Vanillin is an organic compound with the molecular formula C8H8O3. It is a phenolic aldehyde. Artificial vanilla flavoring is often a solution of pure vanillin, usually of synthetic origin.
The largest use of vanillin is as a flavoring, usually in sweet foods. The ice cream and chocolate industries together comprise 75% of the market for vanillin as a flavoring, with smaller amounts being used in confections and baked goods.
Vanillin is known to release several substances when burnt. These include polycyclic aromatic hydrocarbons, which have been classed as human cancer causing agents by the International Agency for Research on Cancer (a leading expert cancer organisation).
It is a fragrance used in a variety of products such as personal care products, flavorings, and essential oils in perfumes. How can I avoid it? Skin contact with Vanillin is required for it to cause a rash.
